Pour the Pimm's No. 1 into an ice-filled highball glass. Top with club soda and stir gently. Garnish with the cucumber spear and lemon slice.
VARIATION: Instead of the club soda, top with a splash of ginger ale, lemonade, or lemon-lime soda.
