Old Cuban
INGREDIENTS
  • 1½ oz good-quality rum
  • ¾ oz fresh lime juice
  • Dash of Angostura bitters
  • 1 oz simple syrup
  • 6 fresh mint leaves
  • 1½ oz chilled champagne
  • Garnish: Half a vanilla bean

INSTRUCTIONS
Shake the rum, lime juice, bitters, simple syrup, and mint vigorously with ice. Strain into a chilled champagne flute. Slowly top with champagne, and stir gently. Garnish with the vanilla bean.
