Old Cuban
INGREDIENTS
- 1½ oz good-quality rum
- ¾ oz fresh lime juice
- Dash of Angostura bitters
- 1 oz simple syrup
- 6 fresh mint leaves
- 1½ oz chilled champagne
- Garnish: Half a vanilla bean
INSTRUCTIONS
Shake the rum, lime juice, bitters, simple syrup, and mint vigorously with ice. Strain into a chilled champagne flute. Slowly top with champagne, and stir gently. Garnish with the vanilla bean.
