NOTES
Irish cream is a relatively modern invention, first created in 1973 by a team led by Tom Jago at Gilbeys of Ireland, a Dublin-based drinks company. The goal was to develop a uniquely Irish liqueur that combined whiskey and cream, using local ingredients. After some experimentation, they formulated the first Baileys Irish Cream, blending fresh Irish dairy cream, Irish whiskey, and cocoa flavors with a touch of vanilla.

Baileys quickly became a global success, inspiring a wave of competitors and homemade recipes. Today, Irish cream is a staple in cocktails, coffee, and desserts, with brands like Carolans, Kerrygold, and Saint Brendan’s offering their own versions.

Despite being a modern creation, Irish cream is deeply rooted in Ireland’s rich dairy and whiskey traditions, making it a beloved addition to the world of spirits.
