Death in the Afternoon
INGREDIENTS
  • 1½ oz absinthe (or Pernod)
  • 3 to 5 oz chilled brut champagne

INSTRUCTIONS
Pour the absinthe or Pernod into a chilled champagne flute. Swirl to coat the inside of the flute, and slowly top with the champagne.

Also known as the Hemingway, this was one of Hemingway's favorite pick-me-ups. While hanging out with other artistic illuminati of the 1920s on Paris's Left Bank, he enjoyed the popular absinthe enough to concoct his own signature drink, and aptly named it Death in the Afternoon, not to be confused with his Death in the Gulf Stream cocktail.
